Cucumber Radish Salad

Ingredients
- 6 ea large red radishes, very thinly sliced
- 1 ea large cucumber, very thinly sliced
- 1 ea small Vidalia onion, very thinly sliced
- 1 t dried green peppercorns
- 1 t grated fresh ginger
- 1/4 C white-wine vinegar
- 1/2 t salt
- 1/2 t sugar
Instructions
- Combine the radishes, cucumber, onion and peppercorns in a bowl. Place the ginger in a small piece of cheesecloth and squeeze the juice into the vegetables; discard the flesh.
- Combine the vinegar, salt and sugar in a small saucepan and cook over medium heat, stirring constantly, until the sugar and salt have dissolved and the liquid just comes to a boil, about 3 minutes. Pour over the vegetables and toss well.
- Remove the vegetables from the liquid and serve immediately.
