Cucumber Radish Salad

Instructions

  1. Combine the radishes, cucumber, onion and peppercorns in a bowl. Place the ginger in a small piece of cheesecloth and squeeze the juice into the vegetables; discard the flesh.
  2. Combine the vinegar, salt and sugar in a small saucepan and cook over medium heat, stirring constantly, until the sugar and salt have dissolved and the liquid just comes to a boil, about 3 minutes. Pour over the vegetables and toss well.
  3. Remove the vegetables from the liquid and serve immediately.
